Tarte au citron

Always wanted to bake a tarte au citron? Then this is your lucky day, below the recipe.

Ingredients Vienesse pastry:

  • 150 grams of flour
  • 100 grams of buttertarte au citron
  • 50 grams of sugar
  • 0,5 egg
  • little bit of salt

Ingredients lemon creme:

  • 100 grams of butter
  • 3 lemons
  • 3 eggs
  • 300 grams of sugar


Mix the flour, butter, sugar and eggs to create the Viennesse pastry. Knead it slowly and add the salt. Make the dough flat and wrap it into plastic wrap. Lay it in the fridge and let it rest for 15 minutes. When the dough is resting you can prepare the lemon creme. Wash the lemons and rasp the yellow skin of the lemons. Half the lemons and squeeze them. Mix it with the sugar and eggs. At the end, mix the butter.
When the dough is ready, Roll the dough to 5 mm thickness. Lined the thin with the dough. Put baking paper on top of the dough in the thin and add dry bones or rice, to pre-bake the dough. Put it in the oven at 180 degrees Celcius. Take the pie after 10 minutes out of the oven and add the creme. Bake the total pie into 30 minutes golden brown. Enjoy!
